Limited / Sidra Bourbon - La Gallera
Grown at Finca El Gallo, this Sidra undergoes two days of aerobic fermentation before depulping, followed by a further 24-hour fermentation. It is then carefully sun-dried on raised beds for 15–20 days.
The result is a vibrant cup with bright acidity, remarkable clarity, luscious sweetness, and a juicy, lingering finish.
