Following depulping, the coffee cherries undergo a carefully controlled fermentation process in a culturing solution infused with cantaloupe and chamomile. This co-fermentation takes place in a low-oxygen environment, allowing for a distinctive transformation of the coffee’s flavor profile. Upon completion of fermentation, the beans are dried through a combination of sun-drying and mechanical methods to preserve their refined character.
A courteous note from VWI: co-fermented coffees are known for their pronounced and often intense aromatic expression. We recommend using a lower dose of coffee during brewing to achieve a more balanced extraction. Due to the remarkable clarity and precision of flavors, this coffee proves to be an excellent choice for those new to specialty coffee, enabling an accessible yet faithful recreation of the café experience.
