Limited Caturra - Villa Clara Estate
Villa Clara Estate is located in the Caldas region of Colombia’s Andes Mountains at elevations of 1,450–1,500 meters, where rich volcanic soils and a diverse ecosystem contribute to a balanced and refined cup profile.
This lot underwent a unique co-fermentation process in which passion fruit juice was cultured with selected yeast for eight days before being combined with depulped coffee cherries. The mixture was then fermented anaerobically in a 200-liter sealed tank for 72 hours.
This process encourages the interaction between fruit-derived compounds and microbial metabolites, resulting in vibrant stone fruit characteristics and remarkable flavor complexity. After fermentation, the coffee was sun-dried for 12 days, allowing the profile to fully stabilize and develop.
